Baked potatoes back in the oven

Since I decided to put potatoes back in my diet as a source of potassium, I decided to keep this healthy by cooking it in the oven and stuffing it with healthy toppings like sauteed spinach, zucchini, mushrooms, and Vidalia onions. I used a cooking method I found at The Kitchn that gives me a yummy baked potato every time – better than my experience of using the microwave!
