Today’s lunch is leftover Vegan Taco Soup with homemade tortilla chips. Yummy! To make the chips, spray both sides of two small corn tortillas with your favorite oil. Lightly salt – I used pink Himalayan sea salt. Next cut using a pizza cutter. Place on a cookie sheet, and bake at 350 degrees for 8-10…
It gave me the opportunity to eat potato wedges with less guilt since they’re baked instead of fried!
If I had known that vegan food could be this good, I would have switched to a vegan diet years ago!
After viewing the motion picture Girls Trip written by Kenya Barris and Karen McCullah, I was left feeling utterly violated.
Stuffing these made me feel like a world-class chef for a moment!
